Ingredients

Instructions

  1. Heat a large skillet over medium-high heat. Cook the bacon until golden and crisp, about 8–10 minutes. Move it to a paper-towel-lined plate and pour off the fat from the pan (wipe it out or save it).
  2. Add maple syrup and red pepper flakes to the dry skillet, stir, then return the bacon and coat it evenly. Take off the heat and set aside.
  3. Toast the croissant. In a bowl, beat 2 eggs with a pinch of salt and pepper. Melt butter in a medium nonstick skillet over medium heat, then pour in the eggs. Scramble quickly into soft curds for about 1 minute 20 seconds; don't overcook. Remove from heat.
  4. Fold in the chives while the eggs finish cooking in the residual heat.
  5. Place the eggs on the bottom half of the toasted croissant, then the cheddar and the bacon. Cover with the top half and serve right away.
