- Rice · cooked2
- Soy sauce2 tbsp
- Mirin2 tbsp
- Ketchup½ tbsp
- Honey½ tbsp
- Garlic · grated1 clove
- Ginger · grated1 tsp
- Oyster sauce½ tsp
- Cayenne pepper½ tsp
- Lemon¼ tsp
- Apple juice1 tbsp
- Toasted sesame oil½ tbsp
- Sesame seed · toasted½ tbsp
- Black pepper · ground¼ tsp
- Cabbage · shredded
- Scallion · finely chopped2 tsp
- Egg2
- Chili powder½ tsp
Instructions
- Take the beef out of the fridge about 10 minutes before cooking. If slicing it yourself, cut across the grain.
- Mix the soy sauce, mirin, ketchup, honey, garlic, ginger, oyster sauce, cayenne, lemon juice and apple juice in a small bowl until well blended.
- Pat the beef dry with paper towels just before searing.
- Heat a frying pan over high heat with a little oil. Spread the beef in a single layer without overlapping, separating any clumps. If the pan is small, cook in 2 batches.
- When one side is browned, flip the slices and add the sauce at once.
- Stir constantly over high heat for 45 seconds to 1 minute, until the sauce reduces and clings to the beef with no thin watery sauce left. Turn off the heat.
- Divide the cooked rice between 2 bowls. Add shredded cabbage, then the beef, and spoon the remaining pan sauce over it.
- Drizzle with the sesame oil, then sprinkle with the toasted sesame seeds and black pepper.
- Scatter the chopped green onions over the top. If desired, add one egg yolk per bowl and serve hot.
