Ingredients

Instructions

  1. Toast 2 tbsp white sesame seeds in a dry frying pan over medium heat, shaking often, until fragrant and slightly golden. Remove from the heat right away.
  2. While the seeds are still warm, grind them in a mortar until half paste and half powder.
  3. In a bowl, stir 1 tsp unseasoned rice vinegar, 1 1/2 tsp sugar and 1 tsp Japanese soy sauce until the sugar dissolves. If using, add 1/8 tsp dashi granules.
  4. Add the ground sesame and 2 tbsp Japanese mayonnaise to the bowl and whisk until smooth and creamy.
  5. Whisk in 1 tsp toasted sesame oil until combined. Use straight away, or chill for 15 to 30 minutes.
  6. Large batch: toast 140 g white sesame seeds in a large dry pan until golden and fragrant, then blitz in a food processor until half paste and half powder.
  7. In a small bowl, whisk 40 ml unseasoned rice vinegar, 40 ml Japanese soy sauce, 4 tbsp sugar and, if using, 1 tsp dashi granules until fully dissolved. Pour into the food processor.
  8. Add 230 g Japanese mayonnaise and 40 ml toasted sesame oil to the processor and pulse until smooth, creamy and well combined.
