- Canola oil6 cups

Instructions
- Pulse the Doritos in a food processor until finely ground, with a texture like panko. Pour into a shallow bowl.
- Put 1 cup of flour and the beaten eggs into two separate shallow bowls.
- In a large bowl, mix the cold leftover mac and cheese with the cheddar and mozzarella. If the mixture won't hold together, add 1/4 cup flour and mix well.
- Roll about 1/3 cup of the mixture into a tight ball, pressing firmly. Repeat until you have 9 balls.
- Chill the balls in the fridge for about 20 minutes to firm up.
- Coat each ball in flour, then egg, then crushed Doritos, shaking off the excess. Place on a parchment-lined sheet tray.
- Heat canola oil in a large heavy pot with a deep-fry thermometer over medium heat to 350°F (180°C).
- Fry the balls in batches of 2 to 3 for 2 to 3 minutes, until golden brown. Drain on paper towels and sprinkle with salt. Serve hot.
