100 Days Of Cheese Episode 6: Creamy Gorgonzola Bacon Pasta
Ingredients
- Fusilli1 lb
- Bacon · chopped8 oz
- Shallot · minced1
- Chili flake · flakes¼ tsp
- Garlic · minced3
- White wine½ cups
- Heavy cream2 cups
- Blue cheese1 ½ cups
- Parmesan cheese · grated¼ cups
- Saltto taste
- Chive · minced1 tbsp
Instructions
- Bring a large pot of salted water to a boil, cook the pasta until al dente, then reserve 2 cups of the cooking water and drain.
- Cook the bacon in a large saucepan over medium heat, stirring occasionally, for 5 to 7 minutes until crispy. Move it to a paper towel-lined plate and keep the drippings in the pan.
- Over medium heat, cook the shallot, red pepper flakes and garlic in the drippings for 3 to 4 minutes, stirring occasionally, until softened.
- Pour in the wine, scraping up the browned bits from the bottom of the pan, and simmer 2 to 3 minutes until the liquid has reduced by half.
- Add the heavy cream, gorgonzola and parmesan. Whisk for about 5 minutes, until the cheese has melted and the sauce has thickened. Taste and add salt if needed.
- Add the drained pasta to the sauce and stir in about ¾ cup of the reserved cooking water until well coated, adding more water if the sauce is too thick. Stir in the cooked bacon.
- Divide into bowls and garnish with the chives and extra parmesan.
