Ingredients

Instructions

  1. Day 1: butter and line an 8-inch (20 cm) square baking pan with parchment, and set it aside.
  2. Melt 2 1/3 cups (400 g) of chocolate with the butter gently in the microwave or over a double boiler. Let cool for 10 minutes.
  3. Whisk the eggs, brown sugar, vanilla and salt into the chocolate.
  4. Fold in the flour until no streaks remain.
  5. Spread the batter in the pan, scatter the remaining 1/2 cup (85 g) chopped chocolate on top and press in lightly.
  6. Cover with foil and refrigerate for 3 full days (72 hours).
  7. After 3 days, bake straight from the fridge at 350°F (180°C) for about 40 minutes, until just set in the middle with a slight jiggle.
  8. While hot, cover with foil and freeze for 30 minutes.
  9. Then refrigerate for 24 hours.
  10. The next day, cut and serve.
