12-Min Shrimp Blanket Dumplings | I Stopped Folding Dumplings—Here's Why!
Ingredients
- Shrimp1 ½ lb
- Oyster sauce1 ½ tbsp
- Sesame oil1 tbsp
- Cornstarch1 tbsp
- Ginger½ tsp
- Scallion6 stalks
- Wonton wrapper9
- Vegetable oil1 tbsp
- Soy sauce1 tbsp
- Chili oil1 tbsp
Instructions
- Make the filling: in a large bowl, mix the chopped shrimp with the oyster sauce, sesame oil and cornstarch until slightly sticky. Add the grated ginger and scallions and mix until evenly combined.
- Off the heat, spread the cooking oil evenly over the bottom of a large nonstick pan.
- Scoop 9 portions of filling into the pan, leaving space between each one.
- Lay a wonton or dumpling wrapper over each mound and gently press it down so it hugs the filling.
- Set the pan over medium heat and pan-fry for about 1 minute, until the filling begins to set.
- Carefully pour in the water, partly covering the pan while adding it to contain the splatter. Once all the water is in, cover completely and steam for about 4 minutes, until the shrimp is fully cooked through.
- Remove the lid and cook for about 1 minute more, until the water has evaporated and the bottoms are golden and crispy. Leave the dumplings undisturbed.
- Turn off the heat, sprinkle with the sliced scallion, and serve immediately with the soy sauce and chili oil.
