Instructions

  1. Use kitchen shears to cut the kimchi into small pieces. Dice the onion, chop the scallions and cube the ham.
  2. In a large pan over high heat, add 1 tablespoon cooking oil or butter, then the onion and ham. Stir-fry about 1 minute until fragrant. Add the chopped kimchi and stir-fry another minute.
  3. Add the overnight rice and toss to mix evenly. Stir in the kimchi juice, gochujang and a pinch of salt, and stir-fry about 1 minute until well combined. Add the scallions and toss quickly.
  4. In a small cast iron skillet over medium-high heat, add 1 teaspoon sesame oil and press the fried rice into the pan. Leave it undisturbed for 1-2 minutes until the bottom is lightly crisp.
  5. In a separate pan over medium heat, add 1 tablespoon cooking oil or butter. Crack in the egg, season with a pinch of salt and cook sunny-side up or to your liking.
  6. Serve the rice topped with the fried egg, sprinkled with sesame seeds and roasted seaweed flakes.
