15 Minute Easy and fun Breakfast taquitos in 15 minutes
Ingredients
- Tofu15 oz
- Vegan cream cheese¼ cups
- Scramble seasoning1 tbsp
- Black pepper½ tsp
- Bell pepper · chopped¼ cups
- Spinach · chopped½ cups
- Scallion · chopped1 tbsp
- Cheddar cheese2–3 tbsp
- Tortilla10
- Pico de gallo½ cups
- Hot sauce
Instructions
- Crumble the pressed tofu into a bowl. Add the remaining scramble ingredients and mash and mix well so the cream cheese or yogurt blends in. Taste and adjust; add more salt or heat (red pepper flakes or paprika) if needed. Set aside.
- Heat a skillet over medium-low heat. Once hot, warm the tortillas until pliable.
- Place a thick line of the tofu mixture down the middle of each warm tortilla. Fold tightly over the filling, then roll into a taquito. Repeat with all tortillas.
- To bake: place the taquitos seam-side down on a greased or parchment-lined sheet and brush generously with oil. Bake at 400°F (205°C) for 12 to 15 minutes. Turn them and bake 5 to 10 more minutes, until golden brown on most edges and crispy.
- To pan-fry instead: heat a pan with a little oil over medium-high heat. Place the taquitos seam-side down and leave them undisturbed for 1 to 2 minutes until sealed. Turn and brown the other edges for about a minute, flipping every 20 seconds.
