- Carrotâ…“
- Onion½
- Scallion1
- Salt
- Vegetable oil2 tbsp
- Chicken stock · powder½ tsp
- Black pepper
- Toasted sesame oil1 tsp
- Sesame seed · toasted1 tsp

- Peel the potatoes and cut them into thin matchsticks. Cut one side first to make a flat base so they stay steady.
- Cut the carrot into thin matchsticks, slice the onion thinly, and slice the green onion, keeping the white and green parts separate.
- Boil the potatoes in salted water for 2 minutes, then drain. (Alternatively, skip boiling and soak the sliced potatoes in cold water for a few minutes, then drain.)
- Heat the oil in a wok or pan over medium heat. Add the white part of the green onion, the onion and the carrot, and stir-fry for 2 minutes until the onion softens.
- Raise the heat to medium-high. Add the potatoes, bouillon powder, and salt and pepper to taste. Stir-fry 2 minutes until crispy but tender, then turn off the heat.
- Stir in the sesame oil, sesame seeds and green onion greens. Taste and add more salt if needed, then transfer to a plate and serve hot.
