15 Minute Spinach and Sun Dried Tomato Angel Hair
Ingredients
- Pasta1 lb
- Sun dried tomato · drained sliced1 jar
- Extra virgin olive oil¼ cups
- White wine¾ cups
- Garlic · sliced6 cloves
- Spinach8 oz
- Basil · chopped¼ cups
- Parsley · minced¼ cups
- Saltto taste
- Chili flake · crushed flakes½ tsp
- Parmesan cheese · for serving
Instructions
- Bring a large pot of salted water (2 tablespoons kosher salt) to a boil. Heat a large pan over medium-low heat. After 2 minutes, add the olive oil and garlic, and cook until golden (2-3 minutes). Add the chili flakes and cook 30 seconds more.
- Add the sun-dried tomatoes and cook for 1 minute.
- Add the white wine and turn the heat to medium-high. Cook until reduced by half (about 3 minutes), then turn the heat back to medium-low. Cook the pasta until al dente, which takes only a couple of minutes.
- Add a ladle of pasta water and the pasta to the pan. Toss to coat and emulsify the sauce. Cook 30 seconds, then turn off the heat. Add more pasta water if needed so the pasta does not dry out.
- Add the spinach and basil and toss once more. Taste and adjust the salt.
- Serve with a drizzle of extra virgin olive oil and parmesan on the side. If the pasta dries while waiting, add a couple of ounces of pasta water to loosen it.
