Ingredients

Instructions

  1. Fill a heavy pot with about 3 inches of oil and heat over medium-high heat.
  2. In a mixing bowl, combine the self-raising flour and Greek yoghurt to form a dough.
  3. Turn the dough onto a floured surface and knead for about a minute until no dry flour remains.
  4. Roll about a tablespoon of dough into a ball with your hands or a small spoon, and repeat until all the dough is used.
  5. Check the oil reaches 180°C (350°F) with a thermometer, or fry one donut as a test.
  6. Fry the donuts in batches so the pan is not crowded, for 2 to 3 minutes until puffed and golden brown.
  7. Remove with a slotted spoon and drain on paper towels or a wire rack for about a minute.
  8. If using cinnamon sugar, toss the warm donuts in the sugar mixture.
