Ingredients

Instructions

  1. In a pan over medium heat, toast the walnut halves in the 2 tablespoons of oil for about 2 minutes until fragrant. Remove them.
  2. In the same pan over low heat, melt the butter with the water and 4 tablespoons brown sugar, stirring until dissolved. Add the walnuts and cook until thickened and evenly coated.
  3. Spread the candied walnuts on parchment paper and let them cool completely; they will crisp as they cool.
  4. In a bowl, mix the Kewpie mayonnaise, sweetened condensed milk, honey, rice vinegar and a pinch of salt until smooth. Set aside at room temperature.
  5. Season the shrimp with a pinch of salt and white pepper, add the egg and mix, then toss with the cornstarch until lightly and evenly coated. The batter should be thin.
  6. Heat the frying oil in a pot over high heat to 325°F (165°C). Carefully fry the shrimp for about 2 minutes until golden and crisp, until they reach 145°F (63°C) inside.
  7. Air-fry option: spray the coated shrimp lightly with oil and arrange in one layer. Air fry at 400°F (200°C) for 6 to 8 minutes, flipping halfway, until opaque and 145°F (63°C) inside.
  8. Add the hot shrimp to the sauce and toss gently to coat.
  9. Arrange the orange slices on a plate, place the shrimp on top, and finish with the candied walnuts. Serve immediately.
