20-Minute Japanese Rice Bowl Recipes That Can Feed Your Whole Family 🔥
Ingredients
- Onion2
- Scallion3
- Beef · thinly sliced1 lb
- Rice4 cups
- Ginger
- Egg
- Soy sauce6 tbsp
- Mirin6 tbsp
- Sugar1 tbsp
- Dashi1 tsp
Instructions
- Thinly slice the onions and the green onions, keeping whites and greens separate. Cut the beef into bite-sized pieces.
- Mix the sauce: 1 ¾ cups water, 6 tbsp soy sauce, 1.5 tbsp sugar and 1.5 tsp Hondashi for the alcohol-free version, or the listed sauce ingredients (1.5 cups water, 6 tbsp soy sauce, 6 tbsp mirin, 1 tbsp sugar, 1 tsp Hondashi) otherwise, until combined.
- Pour the sauce into a large pot, add the sliced onions and the white parts of the green onions, and bring to a boil.
- Once boiling, reduce to medium heat and simmer 2 minutes, until the onions turn translucent.
- Add the beef, separating any sticking pieces. Cover and simmer 5 minutes, until the beef is tender; if it is not tender enough, add a splash of water and simmer a little longer.
- Optionally, skim off foam and impurities while simmering for a cleaner broth.
- Divide the rice among serving bowls. Place the beef and onions on the rice and drizzle with 1 or 2 tbsp of the broth.
- Top with pickled ginger, green onion greens and soft-boiled eggs if using. Keep leftover broth to make a second rice bowl with mushrooms or tofu.
