Preparación
- In a medium bowl, mix the peanut butter, 2 tablespoons soy sauce, rice vinegar, brown sugar, grated ginger and 1 tablespoon sriracha. Set aside to whisk later with pasta water.
- Bring a large pot of water to a boil.
- Heat 1 tablespoon of oil in a large deep skillet over medium-high heat. Cook the white scallion parts, bell pepper and garlic, stirring often, until tender, 3-5 minutes.
- Add the remaining tablespoon of oil and the chicken, season with salt and pepper, and break it up with a wooden spoon. Cook, stirring occasionally, until fully cooked and no longer pink, 5-7 minutes.
- Lower the heat to medium-low, then stir in 1/4 cup soy sauce and the spinach. Stir until combined and the spinach wilts, stirring occasionally while the pasta cooks.
- Cook the pasta in the boiling water until al dente, following the package directions.
- Reserve 3/4 cup of pasta water and add it to the sauce bowl. Whisk, then taste and add more sriracha if you want it spicier.
- Drain the pasta, add it to the skillet with the chicken and lower the heat to low. Pour in the sauce and toss with tongs until the noodles are well coated.
- Serve topped with the remaining scallions and a tablespoon or two of chopped peanuts.
