30-Minute Orange Mango Muffins
Ingredients
- Egg2
- Cream½ cups
- Butter · melted½ cups
- Mango1 cup
- Flour3 cups
- Baking soda1 tsp
- Sugar1 cup
- Orange · for the zest, plus extra to garnish1
Instructions
- In a large bowl, whisk the eggs, yoghurt, melted butter and orange mango juice until combined.
- Sift in the flour and baking soda, then add the sugar and orange zest. Fold gently, mixing for only about 30 seconds so the batter stays light.
- Cover the bowl with a tea towel and chill the batter for about 15 minutes. If you are short on time, skip this, but do not overfill the liners.
- Meanwhile, preheat the oven to 220°C (non-fan). Line a 12-cup muffin tray with liners and grease well.
- Fill the liners generously, right up to the top, with batter.
- Bake at 220°C for 8 minutes, then lower the oven to 180°C and bake for a further 12 minutes, until a skewer inserted in the centre comes out clean.
- Remove from the oven and let the muffins cool.
- Lightly dust the cooled muffins with icing sugar and sprinkle generously with orange zest before serving.
