Instructions
- Boil the peeled, quartered potatoes in enough cold water to cover over high heat until a fork pierces them easily, about 30 minutes, then drain.
- Mash the potatoes in a large bowl until no large lumps remain.
- Mix in the garlic, parsley, Parmesan, 1 beaten egg, salt and pepper.
- Shape a spoonful of potato into a patty, put a mozzarella stick half in the middle and wrap the potato around it until fully covered.
- Place the croquettes on a parchment-lined baking sheet and freeze for 30 minutes.
- Set up three shallow bowls with the flour, the remaining 3 beaten eggs and the breadcrumbs. Coat each croquette in flour, shaking off the excess, then in egg, then in breadcrumbs.
- Heat oil in a large pot to 350°F (180°C). Fry the croquettes for 3 minutes, or until golden brown.
- Drain them on a wire rack set over paper towels.
- Let them cool a few minutes before eating, as they are very hot.
- Garnish with grated Parmesan and chopped parsley and serve with marinara sauce.
