4-ingredient pandan infused homemade soymilk!
Ingredients
- Soybean · dried1 cup
- Pandan leaf1
- Sugarto taste
Instructions
- Rinse the dried soybeans, then soak them in water covering them by about 2 inches for at least 8 hours or overnight.
- Drain the soaking water and remove any bad soybeans.
- Set a nut milk bag over a strainer placed over a large pot.
- For each cup of soaked soybeans, blend with about 2½ cups of water for a stronger soy flavor, or 3 cups for a lighter one, at medium speed for 2-3 minutes until a fine meal forms and the color turns from translucent to white.
- Pour the blended mixture into the nut milk bag and squeeze out as much liquid as possible. Set the soy pulp aside for another dish.
- Add the pandan leaves to the pot and turn on the heat. Keep a skimmer and a bowl of water nearby.
- While the liquid heats and begins to boil, skim off the foam, rinsing the skimmer in water after each scoop.
- Once boiling, lower the heat right away and simmer for 8-10 minutes, skimming any more foam.
- In the last few minutes, stir in sugar to taste. Remove the pandan leaves, then serve warm or bottle once cooled.
