  1. Rinse the dried soybeans, then soak them in water covering them by about 2 inches for at least 8 hours or overnight.
  2. Drain the soaking water and remove any bad soybeans.
  3. Set a nut milk bag over a strainer placed over a large pot.
  4. For each cup of soaked soybeans, blend with about 2½ cups of water for a stronger soy flavor, or 3 cups for a lighter one, at medium speed for 2-3 minutes until a fine meal forms and the color turns from translucent to white.
  5. Pour the blended mixture into the nut milk bag and squeeze out as much liquid as possible. Set the soy pulp aside for another dish.
  6. Add the pandan leaves to the pot and turn on the heat. Keep a skimmer and a bowl of water nearby.
  7. While the liquid heats and begins to boil, skim off the foam, rinsing the skimmer in water after each scoop.
  8. Once boiling, lower the heat right away and simmer for 8-10 minutes, skimming any more foam.
  9. In the last few minutes, stir in sugar to taste. Remove the pandan leaves, then serve warm or bottle once cooled.
