4-Ingredient Pumpkin Fritters
Ingredients
- Pumpkin · mashed1 cup
- Egg1
- Flour1 cup
- Baking powder1 tsp
- Sugar3 tbsp
- Cinnamon sugar
Instructions
- In a large bowl, whisk the mashed pumpkin (1 cup / 250 g) and the egg until well combined.
- Add the sieved self-raising flour, the baking powder and the optional 3 tbsp white sugar, and mix to a smooth batter. Let it stand at room temperature for 10 minutes so the flour absorbs the liquid.
- Heat a large non-stick pan over medium-low heat and grease it generously with non-stick spray or vegetable oil.
- Drop 3-4 tablespoons of batter into the pan, spaced apart, and gently flatten each with the back of a spoon into small flat fritters. Cook for 2 minutes until golden brown, flip, and cook 2 minutes more on the other side. Repeat until all the batter is used.
- While still hot, put the fritters straight into a large bowl of cinnamon-sugar and coat well.
