Instructions
- Set the oven to 400°F.
- Put a large, deep pan over medium heat and add the sausage right away, even before the pan is hot. Chop it as it cooks. When there are almost no pink bits left, about 2 minutes, add the olive oil and stir.
- Add the vegetables and cook about 5 minutes, until the onion edges turn brown and slightly translucent.
- Raise the heat to medium-high, add the shrimp and crab, stir, and sear for about 2 minutes.
- Add the remaining oil and all the spices. Stir right away so nothing burns, and keep stirring until everything is coated in spices and oil. Turn off the heat or remove the pan from it.
- If the pan is oven-safe and big enough, bake the stuffing in it; otherwise transfer everything to a baking dish. Lightly grease the dish with oil if using one.
- Add the crumbled cornbread and about 1 cup of broth in handfuls, folding gently, and repeat until all the cornbread and broth are incorporated. Add the bay leaves.
- Cover and bake 35–40 minutes. Uncover and bake a further 10–15 minutes, until the top is browned.
- Rest at least 15 minutes before garnishing and serving.
