Ingredients
- Chicken breast1 ½ lb
- Oil
- Ginger powder1 tbsp
- Black pepper · cracked1 tbsp
- Tamari4 tbsp
- Arrowroot2 tbsp
- Chicken broth⅓ cups
- Ginger · minced2 tbsp
- Sriracha sauce2 tbsp
- Rice wine vinegar1 tbsp
- Broccoli1 lb
- Bell pepper · chopped2
- Scallion
- Lime
Instructions
- Put the chicken in a bowl, lightly spray with oil, then add the spices and arrowroot and rub it all over until sticky.
- Make the sauce with all the ingredients except the arrowroot, season it to taste, then whisk in the arrowroot.
- Heat a nonstick wok or large skillet on high heat, spray with oil, then add the chicken in batches without crowding it.
- Cook the chicken 5 to 6 minutes until the outside is seared and nearly cooked through. Add the bell pepper and cook until it has sear marks on the edges.
- Reduce to medium heat, add the broccoli and toss. Cover for 1 to 2 minutes until bright green.
- Reduce to low heat. Make a space in the pan, pour in the sauce and stir it in the middle until it turns shiny, taking care not to let it bubble.
- Turn off the heat and toss everything in the sauce.
- Divide the ginger chicken evenly among meal prep containers. It keeps 5 to 7 days in the fridge in airtight containers.
