Ingredients

Instructions

  1. Peel the potatoes, cut them into 2-inch pieces, and rinse them 3 to 4 times until the water runs clear. Drain.
  2. Put the potatoes in a medium pot, cover with room-temperature water, and bring to a boil over high heat.
  3. Boil for 15 to 20 minutes, until a fork pierces them easily.
  4. Peel the onion and cut it into 2-inch-thick rings, separating the layers. Pick out 6 rings of similar size.
  5. Drain the potatoes into a medium bowl and mash them smooth with a ricer. Mix in 3 tablespoons of the potato starch.
  6. Line each onion ring with 2 mozzarella strips. Roll about ¼ cup of mashed potato into a log, wrap it around the inner and outer edges of the ring, and shape it into a donut.
  7. Heat the avocado oil in a medium heavy-bottomed pan over medium heat to 350°F (175°C).
  8. Put the beaten eggs, the panko, and the remaining 1 cup of potato starch in three separate bowls. Coat each potato ring in starch, dip it in egg, then coat it in panko, pressing gently.
  9. Fry in batches of 3 for 2 to 3 minutes per side, until golden brown and crispy.
  10. Remove the rings and let them cool slightly on a wire rack.
