Preparación

  1. Preheat the oven to 425°F.
  2. Mix the cornstarch, baking powder, 2 tsp five-spice powder, 1.5 tsp paprika and 2 tsp salt in a bowl to make a dry rub.
  3. Pat the chicken wings dry with paper towels.
  4. Mix the Chinese cooking wine, 1.5 tsp sugar, 1/2 tsp dark soy sauce, grated garlic and grated ginger, and toss the wings with it.
  5. Add the dry rub and toss until no powder remains.
  6. Place the wings on a rack over a foil-lined baking pan with space between them. Refrigerate uncovered for 24 hours or until the skin is completely dry. (If no fridge space, place under a fan for 4–5 hours.)
  7. Bake the wings for 35–45 minutes, checking during the last 10 minutes so they don't burn.
  8. For the sauce, combine 1/3 cup hot sauce, 1.5 tbsp honey, 1 grated garlic clove and 1/4 tsp five-spice powder in a saucepan and bring to a simmer.
  9. Turn off the heat, add 1/4 cup cold butter and stir until melted. Do not keep heating it; the sauce should separate into a clear layer of oil on top, with the sauce below.
  10. Coat the wings in the sauce.
