- Vinho de Shaoxing1 colher de sopa
- Sugar1 ½ colher de chá
- Dark soy sauce½ colher de chá
- Garlic · grated3 dentes
- Ginger · grated½ polegada
- Cornstarch1 colher de sopa
- Baking powder1 colher de sopa
- 5 spice powder2 ¼ colheres de chá
- Salt2 colheres de chá
- Paprika1 ½ colher de chá
- Hot sauce⅓ xícara
- Honey1 ½ colher de sopa
- Butter¼ xícara
Modo de preparo
- Preheat the oven to 425°F.
- Mix the cornstarch, baking powder, 2 tsp five-spice powder, 1.5 tsp paprika and 2 tsp salt in a bowl to make a dry rub.
- Pat the chicken wings dry with paper towels.
- Mix the Chinese cooking wine, 1.5 tsp sugar, 1/2 tsp dark soy sauce, grated garlic and grated ginger, and toss the wings with it.
- Add the dry rub and toss until no powder remains.
- Place the wings on a rack over a foil-lined baking pan with space between them. Refrigerate uncovered for 24 hours or until the skin is completely dry. (If no fridge space, place under a fan for 4–5 hours.)
- Bake the wings for 35–45 minutes, checking during the last 10 minutes so they don't burn.
- For the sauce, combine 1/3 cup hot sauce, 1.5 tbsp honey, 1 grated garlic clove and 1/4 tsp five-spice powder in a saucepan and bring to a simmer.
- Turn off the heat, add 1/4 cup cold butter and stir until melted. Do not keep heating it; the sauce should separate into a clear layer of oil on top, with the sauce below.
- Coat the wings in the sauce.
