50 Garlic Clove Almond Brittle
Ingredients
- Garlic50
- Oil1 cup
- Almond · chopped1 cup
- Cashew · chopped1 cup
- Sugar1 ½ cups
- Corn syrup¼ cups
- Butter2 tbsp
- Salt½ tsp
- Baking soda½ tsp
Instructions
- Line a quarter baking sheet with parchment and set a fine-mesh strainer over a large heatproof bowl.
- Roughly chop the garlic cloves.
- Put the chopped garlic and oil in a small pot over medium-high heat. Cook, stirring often, for 2-3 minutes until it bubbles steadily, then 5-7 minutes more, stirring often and scraping the sides and bottom, until the garlic is pale golden brown.
- Immediately pour the garlic and oil through the strainer into the bowl.
- Toss the roasted garlic with the almonds and cashews in a large bowl until the nuts are evenly coated. Set aside.
- In a small pot over medium heat, combine the sugar, water and corn syrup. Clip a candy thermometer to the side and bring to a boil without stirring.
- Once it reaches 233°F (112°C), stir in the butter and salt. Keep cooking about 10 minutes, until it reaches 300°F (150°C), the hard crack stage.
- Add the nut mixture and stir quickly.
- Add the baking soda and stir; the mixture will foam vigorously.
- Immediately pour the hot mixture onto the prepared baking sheet.
- Let the brittle cool until firm, then break it into pieces.
