- Garlic50
- Salt1 tsp
- Cheddar cheese · shredded1 ½ cups
- Mozzarella cheese · shredded1 ½ cups
- Jalapeño chili · chopped9 tbsp
- Hot dog · skinless18
Instructions
- Mince the garlic finely in a food processor and split it between two small bowls.
- Mix melted butter and salt into one bowl of garlic until well combined, then set aside.
- In a medium bowl, toss the cheddar, mozzarella, jalapeños and the other bowl of garlic until the garlic coats the cheese and jalapeños evenly. Set aside.
- Score each hot dog diagonally on all sides with a sharp knife, about ¼ inch deep.
- Heat a large griddle or cast-iron skillet over medium heat. Cook the hot dogs, turning occasionally, for 5–7 minutes, until browned and crispy at the edges. Remove and set aside.
- Brush the garlic butter inside and outside each bun, setting aside 3 teaspoons for later. Place a cooked hot dog in each bun and pack the cheese mixture tightly on top.
- Spread 1 teaspoon of the reserved garlic butter evenly on the griddle over medium heat. Quickly place the hot dogs cheese-side down and cook 3–4 minutes, until the cheese melts into a golden brown, crispy crust. Repeat with the remaining garlic butter and hot dogs in batches.
