Instructions

  1. Preheat the oven to 300°F (148°C).
  2. Put the peeled garlic cloves in a 9-inch loaf pan and cover them completely with the olive oil. Cover the pan with foil and bake for about 1 hour, until the cloves are deep golden and tender. Let cool, then drain, saving the oil for another use.
  3. In a large bowl, whisk together the flour, kosher salt and instant yeast until evenly mixed.
  4. Add the garlic cloves and the 2 cups warm water, and stir with a rubber spatula until a dough forms.
  5. With the spatula, fold the dough from the edges toward the center, turning the bowl each time, for 8 folds in total. Cover with a towel and rest in a warm place for about 2 hours, until nearly doubled.
  6. Put the Dutch oven and its lid in the oven and preheat to 450°F (230°C) for 30 minutes.
  7. Lightly flour a clean work surface and your hands. Carefully turn the dough out onto the surface, flip it over and brush off excess flour. Fold the edges toward the center 8 times, flip it over again, and transfer it to a piece of parchment.
  8. Score the top of the dough with an X using a sharp knife.
  9. Carefully remove the hot Dutch oven, use the parchment to lower the bread into the pot, and cover with the lid. Bake for 30 minutes, then remove the lid and bake for about 25 more minutes, until golden brown.
  10. Carefully slide the bread out onto a wire rack, peel off the parchment, and let cool for at least 1 hour before slicing.
