- Put the smashed garlic, soy sauce, oil, rice vinegar, scallions and ginger in a large bowl and whisk until combined. Add the wings and marinate in the fridge for 1-2 hours or overnight.
- Drain the wings and pat them completely dry with paper towels.
- Heat 2 inches of oil in a large pot over medium-high heat to 350°F (180°C).
- In a large bowl, whisk the flour, cornstarch and a pinch of salt until combined.
- Coat each wing generously in the flour mixture.
- Fry the wings in small batches for 6-7 minutes, until the skin is golden and crisp and the meat near the bone reaches 165°F (74°C). Lift them out with a slotted spoon and drain on a paper towel-lined tray.
- For the sauce, melt the butter in a large pot over medium-high heat. Add the minced garlic and diced ginger and cook, stirring, for 2-3 minutes, until soft and fragrant.
- Add the honey, water, soy sauce and sriracha.
- Stir the water and cornstarch together in a small bowl, pour into the honey mixture and stir well. Bring to a boil and cook for 2-3 minutes, until thickened.
- Add the fried wings to the sauce and toss until well coated. Sprinkle with sesame seeds and chopped scallions.
