Ingredientes
- Garlic · peeled trimmed50
- Extra virgin olive oil1 xícara
- Mashed potato4 oz
- Potato starch1 ¼ xícara
- Mozzarella cheese4 oz
- Canola oil2 colheres de sopa
- Alga nori1
- Molho shoyu½ xícara
- Mirin½ xícara
- Sake2 colheres de sopa
- Brown sugar1 colher de sopa
Modo de preparo
- Preheat the oven to 300°F (150°C).
- Place the peeled garlic cloves in a 9-inch heatproof pan, cover them completely with olive oil, and cover the pan with foil.
- Bake for about 2 hours, until the cloves are deep golden brown and tender. Set aside.
- In a medium bowl, mix the prepared mashed potatoes with the potato starch until the starch is fully absorbed. Let stand for 15 minutes.
- Scoop the potato mixture into 8 balls of about 2 ounces each. Flatten one ball, place a mozzarella cube and a few garlic cloves in the center, wrap the dough around them to seal, pinch the seams, and shape into a patty. Repeat with the rest.
- Heat the canola oil in a large skillet over medium heat for 2–3 minutes, until it shimmers. Cook the patties 3–4 minutes per side, until golden brown.
- While the patties cook, stir together the soy sauce, mirin, sake and brown sugar in a bowl.
- Pour the sauce over the browned patties. Keep cooking over medium heat, turning often, for 3–5 minutes, until the sauce thickens and the patties are evenly glazed.
- Off the heat, wrap a nori strip around each mochi and serve right away.
