- Thyme¼ cups
- Brie15
- Egg · beaten1
- Paprika½ tsp
- Turmeric · ground¼ tsp
- Sugar2 tbsp

Instructions
- Preheat the oven to 300°F (150°C). Put the garlic cloves in a 9-inch loaf pan, pour the oil over them, cover with foil and bake for about 1½ hours, until deep golden and tender. Let cool for 20 to 30 minutes until the oil is comfortable to handle.
- Take the garlic out of the oil and mash it with a fork on a board for about 3 minutes until a thick paste forms. Put the paste in a bowl.
- Preheat the oven to 375°F (190°C) and line a large baking sheet with parchment.
- Dust a work surface with flour, unroll the puff pastry and roll it into a 15 by 9 inch rectangle. Cut it into 15 squares of 3 inches each.
- Put ½ teaspoon pumpkin butter, ½ teaspoon mashed garlic and ¼ teaspoon thyme in the centre of each square, then top with one Brie bite.
- Fold the corners of each pastry over the Brie and pinch to seal.
- Cut 15 pieces of kitchen twine, each 30 inches long. Wrap each pastry four times with a piece of twine, knot it on top and trim the loose ends.
- Whisk the egg, paprika and turmeric in a small bowl for about 1 minute. Brush the egg wash over the top and bottom of each bite.
- Mix the sugar and cinnamon and sprinkle evenly over the bites. Bake for about 30 minutes, until golden brown. Cool for about 3 minutes until the pastry can be handled.
- Cut the twine knots, unwrap gently, push a pretzel stick and a sage leaf into each bite, and serve straight away.
