Instructions
- Preheat the oven to 425°F (220°C).
- Heat the olive oil in a skillet over medium heat. Add the garlic and cook until softened, 3-4 minutes. Divide the cooked garlic in half.
- Make the garlic butter: mix the melted butter, half of the cooked garlic and ½ teaspoon of the Old Bay seasoning. Set aside.
- In a large bowl, combine the crabmeat, mayonnaise, Dijon mustard, crushed Ritz crackers, lemon zest and juice, 1 teaspoon of Old Bay, the parsley and the remaining cooked garlic. Mix gently so the crab stays in lumps. Season with salt and pepper to taste.
- Place the salmon fillets on a lined baking sheet. Cut a slit in the centre of each fillet to make a pocket. Season generously with the remaining Old Bay and a little salt.
- Divide the crab mixture among the fillets, pressing it into the pockets and mounding the extra on top. Pour some of the garlic butter over the salmon.
- Bake for 12-15 minutes, until the salmon is just cooked through and the crab filling is golden.
- Brush the salmon with more garlic butter and garnish with chives.
