Ingredients

Instructions

  1. Peel the potatoes and cut them into ¼-inch matchsticks, either by hand with a chef's knife or with a mandoline.
  2. In a large bowl, mix 3 cups water, the ice and 2 teaspoons salt. Soak the potatoes for 15 minutes, then drain and rinse well.
  3. Put the potatoes in a pot, cover with water, and stir in the vinegar and 1 teaspoon salt. Boil over high heat until fork-tender but still slightly firm in the centre, about 8 minutes. Drain and cool on a wire rack until completely cool, about 30 minutes.
  4. Heat the oil in a cast-iron pot over high heat to 330°F (165°C). Fry the potatoes in 4 batches for about 3 minutes until light golden. Remove with a wire spider to a wire rack, and keep the oil in the pot.
  5. Freeze the fried potatoes on the rack until frozen solid, at least 4 hours.
  6. Reheat the reserved oil over high heat to 375°F (190°C). Fry the potatoes in 4 batches until golden and crispy, about 5 minutes.
  7. Drain on a wire rack and season with salt to taste.
