Ingredients

Instructions

  1. Bring a large pot of water to a boil for the lettuce.
  2. Wash the romaine thoroughly, soaking if possible, then cut into bite-sized pieces about 2 inches long.
  3. Smash, peel and mince the garlic.
  4. Remove the seeds and core from the chili, cut into thin strips.
  5. Mash the fermented tofu into a rough paste in a small bowl, then mix in the sugar.
  6. Bring water to a boil in a wok over high heat, enough to cover the lettuce.
  7. Once boiling, add the salt and 1 teaspoon oil.
  8. Add the lettuce, stir and cook for 30 seconds, then remove before it loses much crunch. Set aside and pour out the water.
  9. Heat the dry wok over high heat, add 1 tablespoon oil, then the garlic and cook for 10 seconds, stirring slightly.
  10. Add the chili strips and cook for 8 seconds.
  11. Add the mashed fermented tofu and cook for 15 to 20 seconds, stirring.
  12. Shake off excess water from the lettuce, add it to the wok and cook for 30 seconds, tossing well.
  13. Plate the lettuce, scooping up the aromatics, then tilt the plate to pour off some liquid before eating.
