A garlic lover's dream
Ingredients
- Garlic · peeled¾ cups
- Salt
- Lemon3 tbsp
- Vegetable oil2 ¼ cups
Instructions
- Cut each garlic clove in half lengthwise, remove the small green sprout if it comes out easily, and put the halves in a food processor. Add 1½ tsp salt and pulse until finely chopped.
- Add the lemon juice and process until mostly smooth. Scrape down the sides so the garlic gathers at the bottom. Let it sit with the lemon juice for 15 minutes.
- With the processor running, slowly drizzle in about 2 tbsp oil through the feed tube. Stop and scrape the bowl, then process again.
- Keep running the processor and add the oil in a thin stream, about ¼ cup at a time, scraping the bowl after each addition and keeping the sauce creamy and emulsified.
- After each cup of oil, add about 1 tbsp ice water. If the toum looks about to separate, mix in a little ice water to bring it back together.
- When all the oil is in, add 1 to 2 tbsp more ice water. The finished sauce should be thick, fluffy and white, like mayonnaise. Taste and add more salt and lemon juice if wanted.
- Store in an airtight container in the fridge for up to 7 days.
