A great classic Chinese Beef Stir Fry
Ingredients
- Beef7 oz
- Baking soda½ tsp
- Soy sauce2 tbsp
- Oyster sauce1 tbsp
- Shaoxing wine2 tbsp
- Sugar1 tsp
- Sesame oil½ tsp
- White pepper
- Cornstarch3 tsp
- Peanut oil1 ½ tbsp
- Garlic1
- Onion½
- Bell pepper½
- Carrot1
- Bok choy2
- Scallion2
- Rice
- Sesame seed
Instructions
- Put the beef in a bowl, sprinkle over the baking soda and toss with your fingers to coat evenly. Leave for 20 minutes, no longer.
- Rinse the beef under tap water in a colander to remove the baking soda. Shake off the excess water and pat dry lightly; it does not need to be completely dry.
- Mix the sauce ingredients together. Measure out 1 1/2 tablespoons and toss with the beef to coat. Mix the cornflour into the remaining sauce until smooth, then add the water.
- Heat the peanut oil in a large non-stick pan or wok over high heat. Add the onion and garlic and cook for 10 seconds.
- Add the beef and cook until it changes from red to light brown but is not fully cooked through.
- Add the capsicum, carrot, bok choy stems and the white part of the green onions. Stir fry for 1 minute.
- Pour in the sauce and stir until it starts to bubble and thickens quickly.
- Add the bok choy leaves and the green part of the green onions. Toss for 30 seconds to 1 minute until just wilted and the sauce is thick and glossy. Serve immediately with rice, and sprinkle with sesame seeds if you like.
