A "Perfect" French Omelette is hard to make

Ingredients

Instructions

  1. Crack the three eggs into a bowl, add a pinch of salt and whisk well with a fork.
  2. Set a nonstick pan over medium-high heat. When hot, add the butter and wait until it is melted and lightly bubbling.
  3. Pour in the eggs and whisk constantly with a spatula while shaking the pan for 30 to 40 seconds, until curds start to set.
  4. Shape the curds into a rough disc and let the base cook for 5 to 10 seconds.
  5. Shake the pan to loosen the bottom. Tilt it about 30 degrees and use a fork to roll the near side of the omelette halfway over.
  6. Keep rolling slowly toward the far end, then tap the pan handle so the omelette slides to the edge.
  7. Hold a plate in your other hand and tip the omelette onto it seam side down. Tuck in any misshapen edges.
  8. Optionally, rub a little butter on the outside and sprinkle with chives.
