Ingredients

Instructions

  1. Prep the onion and bell pepper by slicing them thinly and set aside.
  2. Thinly slice the chicken breast on a cutting board, then season it with salt, MSG, oregano, garlic powder and red pepper flake.
  3. Wash your hands, then heat a pan over medium-high heat and coat it with cooking spray.
  4. Add the chicken and sear on all sides until cooked through. Set aside.
  5. In the same pan over medium heat, warm the olive oil. Add the peppers and onions with the black pepper and fennel seed if using, and stir-cook for 3 to 5 minutes.
  6. Add the blended San Marzano tomatoes and cook down for about 10 minutes. Turn off the heat and set aside.
  7. Set the oven to high broil. Split the hoagie rolls in half, place them on a pizza screen or baking sheet, and lightly toast the insides, then remove.
  8. Spread a thin layer of the sauce inside each roll, then add a large portion of the chicken.
  9. Top with the cooked peppers and onions and sauce, then the shredded mozzarella and grated Parmigiano.
  10. Place under the broiler until the cheese melts and bubbles.
  11. Add sliced pepperoncini and lettuce if you like. Optionally, wrap in foil and rest for a minute or two before slicing.
