- Cumin · ground½ tsp
- Tomato2
- White bean1 can
- Vegetable broth8 cups
- Rice1 cup

- Lemon2 tsp

Instructions
- Heat the olive oil in a stock pot over medium heat.
- While the oil heats, finely chop the onion, roughly chop the garlic, and cut the peeled carrots into small bite-size pieces.
- Add the chopped vegetables to the pot and stir constantly. When the onions are translucent, add the thyme and cumin and stir quickly.
- Add the grated tomatoes and season with sea salt and black pepper. Turn the heat up to high, stir, then simmer for a few minutes.
- When the grated tomatoes have slightly thickened (3 to 4 minutes), add the drained and rinsed white beans, the vegetable broth and the bay leaves. Stir gently.
- When the broth reaches a boil, add the rice and stir. Cover, lower to low-medium heat and simmer for 18 minutes, or until the rice is just cooked through. Check the rice package for its own cooking time.
- Remove the lid, stir in the lemon juice, then take the pan off the heat.
- Ladle into shallow bowls, garnish with chopped parsley and serve at once.
