Instructions

  1. Make the dough: put the cake flour, baking powder, Cremora and butter or margarine in a bowl and rub the butter into the flour with your fingertips until it looks like breadcrumbs.
  2. Add the sour milk or plain yoghurt and mix with a spoon. Use your hands to bring it together, adding more flour if it is too sticky, then knead until smooth.
  3. Cover with plastic wrap and rest for 30 minutes.
  4. Meanwhile, make the syrup: in a pot on medium heat, combine the sugar, water and cinnamon stick. Stir until the sugar dissolves, bring to a boil, then lower the heat and simmer for 20 minutes until slightly thickened. Take off the heat and set aside.
  5. Divide the rested dough evenly into 16 balls, then split each ball into 3 equal ropes.
  6. Press the tops of the three ropes together and plait them. Secure the ends so they don't open while frying.
  7. Deep fry the plaits in hot vegetable oil until lightly golden.
  8. Drain on paper towels, then dip each side in the syrup for 3 minutes.
  9. Serve as is, or roll in desiccated coconut if you like.
