Ingredients

Instructions

  1. Put the butter and sugar in a bowl and make sure the butter is at room temperature.
  2. Cream them together with a hand mixer or whisk for a few minutes until light and fluffy.
  3. Add the flour and cocoa powder straight into the bowl. Sift the dry ingredients first if the cocoa is clumpy.
  4. Fold with a wooden spoon or spatula until the flour is nearly mixed in.
  5. Gently fold in the cornflakes, breaking them as little as possible.
  6. Scoop 2 tablespoons of dough per biscuit, roll into balls and place on a lined tray, leaving space between them. Press each down with the back of a spoon.
  7. Bake at 180°C/350°F for 15-20 minutes. Cool on the tray for 15 minutes, then move to a wire rack to cool completely.
  8. For the icing, whisk the icing sugar, salt, cocoa powder and room-temperature butter in a bowl. Pour in the hot water and whisk until smooth, adding extra water very slowly only if needed for a thinner consistency.
  9. Spread about a tablespoon of icing on each biscuit with the back of a spoon, top each with a walnut half, and leave for 20-30 minutes to set.
