- Clean the chicken pieces and cut slits in them so the marinade soaks in.
- Dry roast the kasuri methi in a pan for half a minute, cool it, then crush it to a fine powder by hand.
- Make a paste from green chillies to give 1 tsp.
- In a bowl, add all the marinade ingredients one by one and mix well.
- Add the chicken to the marinade and mix well.
- Put a small bowl in the marinade. Heat a piece of coal over a gas flame until it has red embers, then place it in the small bowl with tongs.
- Add a few drops of ghee to the coal, then cover the bowl at once with a lid or plate so the smoke stays inside.
- Leave the chicken at room temperature for about 1 hour.
- Heat 3 tbsp oil in a frying pan until hot, then lay the marinated chicken pieces side by side.
- Pan fry on medium heat, flipping after 5 to 7 minutes and searing both sides, until the marinade is absorbed, the chicken is well roasted and it is crisp and brown.
- Serve as an appetizer.
