African Doughnuts
Ingredients
- Flour4 cups
- Yeast2 ½ tsp
- Evaporated milk12 oz
- Butter · melted3 tbsp
- Sugar3 tbsp
- Salt1 tsp
- Egg1
- Oil for frying
Instructions
- Warm the milk until just warm to the touch, about 110°F (I heated it for 1 minute in the microwave).
- Stir the yeast into the milk and let it rest for 2 minutes.
- Add the sugar, salt, melted butter and egg and whisk together. Then add the flour and mix with a wooden spoon to form a dough.
- Cover the dough with plastic wrap and let it rise in a warm place for about 1 hour, until doubled in size.
- Punch down the dough, place it on a floured board and cut it into 24 equal pieces.
- Roll one piece into a 13-inch rope, twist it in opposite directions, then press the ends together to form a ring. Place on a large tray and repeat with the rest.
- Let the rings rise for about 20 minutes, flipping them halfway through. Meanwhile, start heating the oil on high.
- Heat the oil to about 350°F, which takes 8 to 10 minutes, then lower the heat to medium-low.
- Fry the doughnuts in batches without overcrowding, flipping once when the first side is golden brown. Remove when both sides are golden, about 4 minutes in total, and drain on paper towels.
- Optionally, shake the hot doughnuts in a paper bag with 2 tablespoons sugar and 1/2 teaspoon cinnamon to coat.
