African Fish in Batter
Ingredients
- Fish2
- Flour1 cup
- Baking powder½ tsp
- Onion · roughly chopped¼
- Celery½
- Cilantro2 sprigs
- Garlic · peeled4 cloves
- Ginger · peeled½ inches
- Scallion · chopped1
- Maggi cube1
- Salt½ tsp
Instructions
- Cut each fish into thin slices, about 7-8 per fish. Rinse thoroughly and pat dry with paper towel.
- Blend the ginger, garlic, onion, green onion, celery, parsley and bouillon powder with 2 tablespoons of water into a paste.
- Rub 1/4 teaspoon of salt and a heaping tablespoon of the marinade into the fish with your hands so it coats all sides. Set aside.
- Set aside 1/4 cup of the flour on a plate. To the rest of the flour, add a tablespoon of marinade, the baking powder, 1/4 teaspoon of salt and half the water, and mix until smooth. Then add the remaining water to make a batter about as thick as thick crepe batter.
- Heat oil on high for about 5 minutes, then reduce to medium.
- Coat each fish slice in the flour from the plate, dip it in the batter to coat well, and place it in the oil. Repeat with all the fish.
- Fry on medium heat about 5 minutes per side. The fish should spend 10-15 minutes in the oil in total.
- Remove when golden brown and drain on paper towel.
