African Meatballs
Ingredients
- Ground beef2 lb
- Onion · chopped1
- Garlic · minced8 cloves
- Egg1
- Parsley · chopped3 sprigs
- White pepper¼ tsp
- Stock cube4
- Breadcrumb½ cups
- Oil¾ cups
- Tomato · chopped3–4
- Tomato sauce16 oz
- Basil · chopped3 leaves
- Salt1 tsp
Instructions
- In a large bowl, combine the meat, breadcrumbs, egg, parsley, half the garlic, half the onion, salt, white pepper and seasoning cubes. Mix by hand until just combined.
- Scoop the mixture with an ice cream scoop and shape each portion into a ball in your palms. Place the balls on a tray and repeat until all the mixture is used.
- Heat the oil in a pan on high for about 5 minutes. Lower the heat to medium, then add the meatballs without crowding the pan.
- Cook one side for 3 minutes, flip and cook the other side for about 3 minutes. Remove from the oil and repeat with the remaining balls.
- Add the remaining onion and garlic to the oil and sauté until fragrant. Add the tomatoes and cook, stirring occasionally, for about 5 minutes until they shrink.
- Add the tomato sauce and cook for another 10 minutes, or until the tomatoes no longer taste sour, stirring occasionally. If the sauce is too thick, add 1/2 to 1 cup of water.
- Add the remaining seasoning cubes and a pinch of salt and stir well. Add the meatballs and mix gently to coat them in sauce, then simmer for about 10 minutes.
- Stir in the chopped basil, turn off the heat and serve over boiled spaghetti, another pasta or boiled rice.
