Ingredients
- Spinach · chopped4–5 cups
- Tomato · chopped5 cups
- Onion · chopped1 cup
- Stock cube3
- Salt
- Canola oil1 cup
- Shrimp · peeled1 ½ cups
- Chicken breast · chopped½ lb
- White pepper · ground¼ tsp
Instructions
- Season the shrimp with a pinch of salt and half of the white pepper, and mix well so every shrimp is coated.
- Season the chicken with a pinch of salt and the other half of the white pepper, and mix well so every piece is coated.
- Heat the oil in a pot on high for 3-4 minutes, then reduce the heat to medium.
- Fry the shrimp until pink, flipping once one side is cooked. Remove when the other side is done; the shrimp cook about 4 minutes in total.
- Add the chicken to the oil and cook about 5 minutes, flipping halfway through. Remove once it is thoroughly cooked.
- Add the chopped onion to the oil and saute 2-3 minutes until translucent.
- Add the tomatoes and cook covered on high heat for 10 minutes, opening to stir from time to time. Then cook uncovered for another 5 minutes, stirring often to prevent burning. The tomatoes are ready when greatly shrunk and only oil and tomatoes remain in the pot.
- Add the salt and Maggi cubes and stir well. Add the spinach and mix well.
- Add the shrimp and chicken, mix well, then turn off the heat. Serve warm.
