Aglio e Olio (Garlic Oil spaghetti)
Ingredients
- Spaghetti500 g
- Salt3 tsp
- Extra virgin olive oil½ cups
- Garlic6
- Chili flake · flakes½ tsp
- Parsley · finely chopped⅓ cups
- Parmesan cheese
Instructions
- Cook the spaghetti in 4 litres of boiling water with 2 teaspoons of salt, for the packet time minus 1 minute.
- Just before draining, scoop out 1 cup of the cooking water, then drain the pasta.
- Four minutes before the pasta is ready, heat the oil in a large pan over medium heat.
- Add the sliced garlic and cook gently for 2-3 minutes, until very lightly golden. Do not rush this, as it flavours the oil.
- Add the chilli flakes and stir for 20-30 seconds, until the garlic is light golden but not brown.
- Add the drained pasta, ½ cup (125 ml) of the reserved cooking water and 1 teaspoon of salt. Toss over medium-high heat for about 1-1½ minutes, until the oil and water form a sauce that clings to the pasta. Add more water if the pasta gets sticky.
- Add the parsley and toss quickly.
- Serve immediately with grated parmesan.
