Air Fried Omelette Loaded Baked Potato - Breakfast Short
Ingredients
- Potato1200 g
- Egg10
- The Fit Cook Everyday seasoning1 tbsp
- Chili pepper1 tbsp
- Salt
- Black pepper
- Scallion · diced2
- Cheese · shredded1 cup
- Broccoli · chopped1 cup
- Bell pepper · diced½
- Bacon · chopped4 pieces
Instructions
- Preheat the oven or air fryer to 420°F (216°C). Prick each potato with a fork, wrap in foil and bake for 1 to 1.5 hours, until a fork pierces them easily. Let cool enough to handle.
- Cut off the top of each potato lying on its side, without cutting it in half. Scoop out the flesh, leaving a thick border so each potato forms a cup.
- Set the air fryer or oven to 400°F (204°C).
- Beat the eggs with the seasoning, cheese and green onion.
- Spray each potato with olive oil and sprinkle with a pinch of salt and pepper. Add about 1 tablespoon each of broccoli, bell pepper and bacon, then pour in the egg mixture.
- Place the potatoes in the air fryer basket and cook 20 to 25 minutes, until the egg is fully set. For a browned top, cover each potato loosely with a foil dome and remove the foil for the final minutes.
