Ingredients

Instructions

  1. Soak the wooden skewers in water for 20 minutes before cooking so they don't burn.
  2. Boil the vinegar, water and sugar in a saucepan. Take off the heat, pour over the carrot and cucumber in a jar, cover, and refrigerate until cold.
  3. Put the rice, water, salt and any aromatics in a saucepan over high heat, stir to stop clumps, and bring to a boil. Cover, drop the heat to low and cook for 12 minutes. Turn off the heat, keep the lid on for 4 minutes, then remove the aromatics and fluff with a fork.
  4. Mix all the bang bang sauce ingredients in a bowl, then split into two bowls and set one aside for serving, not for the chicken.
  5. Combine the chicken with the seasoning ingredients, thread onto the soaked skewers, and brush with half the sauce from the mixing bowl.
  6. Air fry at 200°C (390°F) for 8 minutes. Take out the chicken, brush with the rest of the sauce, and air fry for 6 to 8 more minutes until the chicken is cooked through.
