Ingredients

Instructions

  1. In a medium saucepan, bring the water, butter, sugar and salt to a boil over medium-high heat, then take the pan off the heat right away.
  2. Add all the flour at once and stir hard until no dry flour remains, about 1 minute.
  3. Return the pan to medium-low heat and stir constantly for 1 to 2 minutes to dry the dough; it should look like very thick mashed potatoes and pull cleanly from the pan sides and bottom.
  4. Transfer to a stand mixer with a paddle attachment (or a hand mixer in the pot) and mix on medium speed for about 3 minutes, until slightly cooled.
  5. Add the eggs one at a time, mixing well after each, then add the vanilla. Scrape the bowl as needed. The dough should be smooth, glossy and thick, and hold its shape for a few seconds when swiped with a spatula.
  6. Pipe the dough through a large closed star tip (Wilton 1M) onto a small parchment-lined sheet into churros about 4 inches long and ¾ inch wide, cutting each off at the tip with a paring knife.
  7. Freeze the churros for 30 minutes.
  8. Arrange the chilled churros in an air fryer basket with about 1 inch between them. Air fry at 375°F for 8 minutes, flip, then air fry at 325°F for 8 more minutes, until golden brown and dry in the center.
  9. Mix the sugar and cinnamon in a shallow wide bowl. While the churros are hot, toss them in the cinnamon sugar; if the sugar won't stick, lightly spray them with vegetable spray first.
